Wash, spin the lettuce

Grate the parmesan into strips

Prepare the sauce: in the bowl of a blender, pour the egg yolk, the 2nd clove of crushed garlic, the lemon juice, the anchovies, the mustard. Mixer. Add the olive oil in a trickle until you get the consistency of cream. Add salt and pepper if needed

In a salad bowl, or soup plates, arrange the salad cut into wide strips at the bottom, the chicken, the warm croutons, the parmesan strips and serve with the sauce on the side
